I got this recipe from Gluten Free on a Shoestring and altered it slightly.
Ingredients:
5-6 peeled apples, I used Macintosh because those are my
favorite
favorite
1 teaspoon ground cinnamon, plus 2 tablespoons of sugar
1 stick and two tablespoons unsalted butter
1 egg
1 ½ cups gluten free flour
½ cup gluten free oats
1 cup chopped pecans/walnuts
Instructions:
1. Preheat oven to 350 degrees-I usually do this once I’m done
making everything because my oven heats up extremely fast.

2. Filling-combine the apples,
1 teaspoon cinnamon, and 2 tablespoons sugar in a medium sized bowl. Once you have this mixed put the mixture into
your pie plate or in my case I used an 8×8 baking pan.

3. Topping-blend the butter and 1 cup sugar (I used a little
less than one cup so it wouldn’t be too sweet) until it becomes thick. Add the nuts and mix them in as well. Now all you have to do is cover the apples
with the topping then once you’re finished cover the plate with foil and bake
for 35 minutes. Remove the foil and bake
for another 10-15 minutes until the topping is lightly golden brown. Sprinkle a little extra cinnamon on top.
