My Favorite Recipes I’ve Made Since We Moved

As some of y’all know, I had a super tiny kitchen at our apartment.  Since moving from NJ to Florida, I have acquired a big kitchen with an island!  I have SO. MUCH. ROOM. FOR. COOKING.  It makes me super happy because I’ve been able to experiment with a lot of different recipes.  If you’ve been following me on Instastories, you’ve seen all of these recipes because I started keeping track of all of my dinners.  Some of the recipes I altered, however I worked off of particular recipes that I found on Pinterest.  So, let’s take a look at my favorite recipes so far (in no particular order)!

Beef Barley Soup

This soup was so delicious!  Unfortunately, when we used it for left overs it was super thick and not soup like at all the following night.  I did add more broth to it, but it just turned into a thick mush.  It was still good, but it wasn’t a soup at that point.

Beef Stroganoff

OMG, this was sooooo good!  I made enough for my fiance and his dad to have left overs while they were working together one day.  My fiance’s dad and mom were actually in Florida visiting when we moved.  Because of this, his dad helped us paint for the entire week that he was here.  So of course, I fed him every day.

Chicken Recipe

This parmesan cheese breaded chicken was so easy to make and so delicious!

Bruschetta Chicken Recipe

I loved it, but the fiance didn’t want the tomatoes on top of his chicken, so it kind of defeated the purpose of the entire recipe haha.

Chicken Parm Baked Ziti

I just made this last week, and it was so good.  After being on so many diets, I’m not a huge fan of chicken, but this recipe was so good!

Chicken Pot Pie with Biscuits

This was, hands down, the easiest recipe and so good!  I know it’s really bad for you, but it’s delicious.  If you’re on a diet, I highly recommend this on cheat day!

Mediterranean Chicken Bake

Ok, so when we first moved to Florida, I thought it would be cute to attempt a new diet; the Mediterranean Diet.  Needless to say, I didn’t stick with it because I just couldn’t handle everything that was going on and include a diet into the mix.  However, all of the Mediterranean recipes were delicious.  This recipe wasn’t one of my favorites, but it was one of my fiance’s.  Which is a win in itself since he’s so picky.

BBQ Chicken Tostadas

I love anything BBQ flavored.  I don’t know what it is, but I love BBQ.  When it comes to eating chicken nuggets or chicken fingers, I need BBQ.  I would rather eat them by themselves than with ketchup haha.  These tostadas were so good, I’ve made them more than once.  They are also super easy to make.

Meatball Sandwich

Ok, so I actually made the meatballs myself in this recipe, but you can get store bought ones as well.  This recipe was really easy, and super inexpensive.

My Own Recipe

So, I made a dinner that both my fiance and I hated.  It was a sweet potato recipe with a sauce.  I’m not a huge sweet potato fan, so I can’t eat them by themselves.  However, I know that they are good for you.  So, the following day I made this little dish.  Oh, speaking of dishes, ignore the styrofoam plates, my dishes did not arrive, and I was using these instead.  However, I finally had enough and went out and bought two dishes haha.  Underneath the eggs is a mixture of sweet potatoes with some cheese and tomatoes.

French Onion Soup

My fiance LOVES french onion soup.  I decided that I wanted to start experimenting with soups.  This was the first soup that I made here in Florida.  Of course I didn’t use the cheese you are supposed to use for French Onion Soup, but I was living on a budget due to the entire move.

French Onion Pasta

Now, the soup lasted us for two nights and, once that was done, there were a bunch of onions left over.  I didn’t want to throw out the onions, so I followed this recipe for French Onion Pasta.  It was delicious!

French Toast

On Saturday’s I work at the Farmer’s Market for a few hours, and so does my fiance (more on this at a later time) and at one of the markets that he worked, he bought this delicious maple syrup.  I told him to buy bread on the way home and that I would make French Toast.  Just follow any recipe (they are all very similar).

Pork Gulasz (Gulash)

Honestly, I was not impressed with this recipe.  I’m not trying to be rude but, my mom’s gulasz is so much better.  Maybe it’s just what I’m used to, but this recipe was not that good.  My fiance didn’t think it was that bad, and he’s picky, but maybe it’s because I’m Polish and it seems like this recipe might be from a different part of Poland.  There are a lot of Polish recipes that differ depending on what region you’re in, and this was definitely one of them.

Honey Dijon Garlic Chicken Breasts

This recipe was delicious.  The honey brought out so much flavor.  My fiance said this recipe was really weird, but he actually really liked it.

Lemon Shrimp Linguine

My fiance’s mom tagged me in a post on Facebook for this recipe.  It was definitely a little different but it was good.

Pierogi

I actually posted my recipe here on the blog, and I’m so happy that I made them.  They are very time consuming, but you can freeze them and have them for a lot of dinners haha.

Prosciutto Wrapped Chicken/Caprese Garlic Bread

Ok, so the chicken recipe was slightly altered.  I bought chicken tenderloins and wrapped them with prosciutto.  Super easy!  I also made caprese garlic bread to go along with it.

Quinoa with Strawberry Banana Sauce

This is a super easy and healthy dish to make.  All you do is mix greek yogurt with strawberries and bananas, and you can add sugar or honey if you’d like.  I added a very small amount of honey, but the yogurt was still a little closer to tasting like plain greek yogurt.  I put it on top of the quinoa and it was so good!

Pan Seared Scallops

This was my first time cooking with scallops.  My fiance was IN LOVE with this recipe and so was I.  Very delicious!

Lemon Garlic Butter Shrimp with Asparagus

Such a quick, easy, and delicious recipe!  One of my favorites for sure!

Creamy Garlic Shrimp

SO, SO, SO GOOD!  Highly recommend this recipe!

Shrimp Orzo

I’ve never cooked with orzo before, but have always wanted to try.  My fiance had a blast from the past, because the last time he ate orzo was when his grandma made it for him.  This dish was so yummy!  I didn’t use feta cheese like the recipe calls for, because my fiance hates feta cheese unfortunately.

Sheet Pan Recipe with Shrimp, Kielbasa, Potatoes, and Corn

I’ve never tried a sheet pan dinner, and I must say, this one was delicious.  My fiance wasn’t a huge fan, but I definitely was!  It wasn’t as good as leftovers because of the texture of the shrimp when you heat it up, but straight out of the oven was amazing!

Spaghetti Bake

This was a huge hit!  I made this a few times already.  I also made it for a family dinner with my fiance’s brother and his family.  It’s so easy to make and it feeds a lot of people!

Super Easy Strombolli

This is one of the easiest recipes I’ve ever tried in my entire life!  It’s so easy and so good.  I’ve made it a number of times already.

Taco Stuffed Shells

Ok, there’s a funny story behind these stuffed shells.  I attempted to make these two times.  The breaker for my oven needed to be replaced and I attempted to make these two times before they fixed my oven  haha.  It was worth the wait!

Tortellini Al Forno

This was so freakin’ good!  My fiance loved it too.  However, it is definitely high in calories haha.

Tortellini Alfredo

I wasn’t a huge fan of this, but my fiance loved it.  I don’t know what it was about this, but something wasn’t sitting with my taste buds.

Tortellini with Spinach and Tomatoes

I’ve made this recipe multiple times, and every time I love it more and more.  It’s going to be really high in calories, BUT it’s totally worth it.  Well, in my opinion haha.

I know some of you have messaged me on Instagram asking for recipes, so I figured in case anyone wanted any other recipes that they didn’t ask me about, I’d put all of the recipes in one spot.  I’m sure there will be a lot more in the future because I have come to cook a lot here in Florida!  I think it’s the fact that I have a much bigger kitchen so I have so much more room!
