cream! Sometimes the boyfriend brings me
home ice cream when I’m having a bad day and it cheers up my mood instantly. Now that we are FINALLY in the warmer months
here in the Northeast I’m even more excited to eat ice cream on those nice
summer nights. I also love sundaes and
adding things to my ice cream. That’s
why for today’s post I wanted to do something a little different. I wanted to make ice cream sundaes, but on
cupcakes. It’s the perfect mix, and the
best of both worlds!

why for today’s post I wanted to do something a little different. I wanted to make ice cream sundaes, but on
cupcakes. It’s the perfect mix, and the

I made funfetti cupcakes and added Blue Bunny® PB ‘N Cones™ Ice cream, Smucker’s Hot Fudge Spoonable Ice Cream topping and Reddi-Wip® original whipped topping on top as the sundae portion. Now really funny story about the cupcake

completely forgot they were in the oven so they were in the oven for about an
extra 20 minutes (I went and took a shower and forgot to put on a timer) so
over one of the recent weekends I had went upstate for a mini vacation with my
boyfriend’s family and his sister helped me make the cupcakes and this time
they didn’t stay in the oven for an extra 20 minutes haha. She was watching them like a hawk! I got all of my ingredients at Walmart. I’m not going to lie either, when I tried the
Blue Bunny® PB ‘N Cones™ Ice cream by itself (for research purposes of
course lol) I fell in love. It has such
an interesting taste to it and the cones in the ice cream make it that much
better.

Anyway, let’s get into the recipe/tutorial, shall we?

Ingredients
Topping (instead of icing)
- Blue
Bunny® PB ‘N Cones™ Ice cream - Smucker’s
Hot Fudge Spoonable Ice Cream topping - Reddi-Wip® original whipped topping
Funfetti Cupcakes
- 3 cups all purpose flour
- 1 ¾ cups granulated sugar
- 2 ½ teaspoons baking powder
- 1 teaspoon salt
- 1 cup unsalted butter at room temp cut into ½ inch cubes
- 4 eggs
- 1 cup whole milk
- 2 teaspoons vanilla extract
- ½ cup rainbow sprinkles
Directions
- Preheat oven to 350 degrees
- Add flour, sugar, baking powder and salt and mix together on
low speed. With the mixer on low add the
butter a few cubes at a time. The
mixture should resemble coarse sand. - Add the eggs one at a time on low speed. Slowly pour the milk and vanilla and mix
until everything is combined. If you
need to, scrape the sides of the bowl to make sure everything is mixing
properly together. Now, gently stir in
the sprinkles. - Fill each liner (24 cupcakes worth) about two-thirds of the
way. Bake for 15-20 minutes (and make
sure to set a timer and NOT take a shower in between like I did the first time
around) until the centers are not liquidy. - Make sure to cool your cupcakes until they are room
temperature. You will be adding ice
cream as an icing so you don’t want the ice cream melting before you can even
enjoy the cupcakes in their entirety. - Before you scoop the Blue Bunny® PB ‘N Cones™ Ice cream, make sure to microwave
your Smucker’s Hot Fudge Spoonable Ice Cream topping so that it’s already
melted and ready to serve (in case you didn’t check like myself it’s hard as a
rock and has to be microwaved haha!). - Once
you microwave your desired amount of Smucker’s Hot Fudge Spoonable Ice Cream topping you will be starting with your Blue Bunny® PB ‘N Cones™ Ice cream. Scoop your ice cream and put about one scoop
on each cupcake. Take your Reddi-Wip® original whipped topping and make a little
dollop (in between eating some yourself because let’s be honest when it comes
to whipped cream I can’t control myself), then top with your Smucker’s Hot Fudge Spoonable Ice Cream topping. - Voila,
dessert is served!
Now,
since the boyfriend’s sister helped me, I just had to take pictures with her
and eat some cupcakes, although we did eat the ice cream off first because we
loved it haha. I mean if it was a team
effort baking, it HAS to be a team effort in taste testing!

What a fun idea for a cupcake and a great alternative to frosting. Funfetti is always a hit in my house! Baking is def always more fun when you're doing it with someone else. 🙂 Nice photos! #client
